Can it be overcooked?

by Marc
(London)

I've just tried my first batch of sugar paste, and it all went fine, I got the change of colour and poured it into a jar. When it cooled though it went very solid, and almost brittle at the edges. I couldn't get my fingers in to grab a chunk, let alone mold it. It seems quite dark though, more of a nutty colour than amber.

Have I overcooked it, or have I got the proportions wrong, I used the proportions exactly as stated.

Thanks

Try this, if too solid put in microwave (low setting- and depending on amount 1kg approx 1 minute, so adjust accordingly) THEN LEAVE FOR ABOUT AN HOUR-very imporant otherwise you'll burn yourself. The actual consistency you need to obtain for sugar paste should be so that you can roll it into a ball between your thumb, index and middle fingers.
