the thing with the citrus is that it helps the sugar to stay softened and stops it from solidifying.

I've read alot of these recipes and I noticed one thing in common, all of them have some sort of citric acid in them. You don't have to use lemon but I would definitely suggest some sort of citrus like oranges or limes
