Not getting it right

by anonymous

I made this recipe quite a few times now, the first time it was runny and I had to use the strips, it was quite messy...Tried to make it about 6 more times, everytime it ends up to the candy string stage, I have even used a candy thermometer and taken it to the amber stage...nothing works, the only thing that I can think of is that we are at 5000 feet above sea level. Any ideas would be appreciated.

sea level

I did a Google search for 'how sea level affects candy recipes' and there is indeed a bit of tweaking that needs to be done for the recipe to work. Allrecipes.com had the following advice...

"For every 500 feet above sea level, decrease the temperature by one degree. If you live at an altitude of 3500 feet and the recipe calls for cooking to 234 degrees F (112 degrees C), cook it to 227 degrees F (108 degrees C)."

I hope this info helps! I will likely add a little blurb about this to the article as it is something that will affect a large percentage of the people trying this recipe.

Thanks for posting your concerns. Do let us know if you have success.
