Way too sticky...

I followed these directions to a T.... I cooked mine until it was amber-colored and smelled like cooked lemon, and my candy thermometer said it had reached 246 degrees. It took almost exactly 25 minutes. I let it cool overnight at room temperature, but now it is the consistency of honey or molasses. I tried to grab a bit, but it was extremely sticky and messy. What should I do?
